Wine and milk

In the mid-Nineteenth century, the French wine industry introduced mass production to the mass market.  But it was loosing thousands of gallons due to souring.  A man named Louis Pasteur introduced a special heat treatment that prevented fermentation and souring.

On this lake of bad wine, he launched the science of Bacteriology.  This same process was useful in preserving milk.  Ever wonder what it meant to be Pasteurized ?
